Willow goes insane with power/grief after the death of Tara, and then in Season 7 turns into Warren because she blames herself for Tara's death.
Dawn cuts herself to see if she's real, and deals with the issues of being "a key."

Fred comes back from another dimension muttering, drawing on walls, and takes months to completely socialize (and later reverts, when Gunn kills someone "for" her).
Cordelia is a tad more sketchy, but the whole getting inhabited by a demon in order to manipulate those around her and birth Gina Torres can be considered a mental issue, right?
